Station Descriptions:

Seafood Delight
Delicious Jumbo Lump Maryland Crab Cakes pan seared at the station by a uniformed chef presented on a bed of Roasted Corn Salad with Red Onion & chopped Cilantro served with a trio of sauces ;Basil Remoulade, Roasted Red Pepper Coulis, & a Creamy Tarter Sauce.

Grill Station
Whole Three Peppercorn Crusted Strip Loin cooked to perfection carved to order by a uniformed Chef served with a sauce created with a savory red wine cabernet reduction.(Porterhouse Steaks may be substituted) The steak is perfectly paired on this station with Jumbo Grilled Garlic Infused Portabella Mushrooms and Warm Red Bliss Potatoes with sweet caramelized onions , crispy Pancetta Bacon, & fresh Herbs.

The Duck Pancake
Always a crowd pleaser! This station has an Asian flavor & showcases the popular Chinese favorite, Crispy Peking Duck. The crispy duck will be presented in sizzling sauté pans. A chef will place this crispy mixture onto a light herb crepe . He then will add long strips of cool cucumber, diced scallion, and Hoisin Sauce. The chef will hand roll the crepe and present it to the guest. In addition to the crepe, this station will feature a duo of Steamed Vegetarian Dumplings & Pork Dim Sum. The will be presented in stacked natural steaming bamboo steamers.

Table of Plenty
This station is considered a salad station. One Hundred and twenty five individual hollowed ripe Plum Tomatoes are stuffed with Mesclun Greens & thin Pencil Asparagus. They are presented on rectangular white ceramic platters. They appear as individual floral arrangements. They have been described by guests as clever and attractive . These architectural salads are drizzled with dressing as they are taken from the buffet. This station also consists of a Garden Ripened Yellow & Red Tomato Salad tossed with fresh Italian Mozzarella , Cold Pressed Extra Virgin Olive Oil & Aged Vinegar. Grecian Style Stuffed Grape Leaves, as well as, Large Bowls of seasoned Tuscan Olives, and an antipasto summer salad consisting of Artichokes, Mushrooms, & Sundried Tomatoes complete this well received station.

Antipasto Station
This station is certainly a crowd pleaser. Chefs saute in iron skillets a duo of Tuscan Bruschetta Toppings, Diced Wild Mushrooms sautéed with olive oil & herbs then reduced with Red Wine until perfectly cooked. This vegetarian delight is then placed upon a piece of crispy toasted bruschetta bread. Next to the Wild Mushroom Medely sits our award winning warm Eggplant Camponata, also presented on crispy Bruschetta. This station includes the finest selection of Imported Tuscan Cheese complemented with seasoned olives. Finally, Crispy Calamari Salad with Shards of Parmesan placed upon a bed of dressed Greens complete this table.

Tortellini Station
This station's focal point is Homemade Ricotta Stuffed Tortellini. This fresh pasta is combined with the accompaniments of the guest's choice to create their favorite Italian Pasta Entrée. Accompaniments include: Parmesan Regiano, Sauteed Broccoli Rabe, Sun Dried Tomatoes, Pancetta Bacon, Cannellini Beans, Italian Fennel Sausage, Roasted Red Peppers, Pine Nuts , Basil Pesto Sauce, Pomodoro Sauce, & Olive Oil & Garlic Saute (accompaniments and sauces can be modified).

Caesar Salad Station
A chef will prepare Caesar Salad tableside in front of each guest. This form of presentation is traditional & authentic. Once the chef prepares this classic salad it will be placed in a Tuile Cup made of Crisp Parmesan & finished with ground Black Pepper.

Tuscan Meat Station
This is a bountiful presentation of roasted stuffed Meats combined with an elaborate display of roasted vegetables & potatoes. The menu consists of Tuscan Pork Loin with Basil Pesto, White Bean, Pancetta Ragu & Cabernet Roasted Beef served with a savory Cabernet Gorgonzola sauce. These meats are carved in front of the guests. The roasted vegetables are presented as individual napoleons and drizzled with Balsamic Reduction. The potatoes are slow roasted and seasoned with Lemon, Fresh Parsley, Garlic, & Parmesan Cheese.
